Hundreds of recipes lay claim to the title of “best burger” but the only way to find the one you love is to give it a go.
These four ideas, all for four people, will give shop-bought burgers a bun for their money.
THE CLASSIC: Take 500g of mince, mix with one egg and a finely chopped onion.
Shape into evenly sized balls, flatten into patties and place on a plate in the fridge for half an hour.
Brush one side with a little bit of vegetable oil and then either fry or place on the barbecue until cooked.
THE THREE-INGREDIENT PATTIE: Mix 500g of beef mince with 50g breadcrumbs and a tablespoon of tomato ketchup or purée.
Then shape into similar size burgers before cooking as above.
THE HIDDEN CHEESE BURGER: Mix together 60g each of grated cheddar and mozzarella.
Once you’ve made your beef patties using one of the recipes above, divide the cheese mixture into four.
Squeeze each into a ball and flatten. Push the cheese disc into your burger, bring the meat over and around until it’s covered.
Cool in the fridge for 30 minutes. If you’re using a barbecue, cook on both sides for five minutes each, then wrap in foil and keep cooking for five minutes so the cheese melts inside.
Without a barbecue, cook in a frying pan for five minutes each side and then bake in the oven for ten minutes on a high heat.
THE CHEF’S BURGER: Every chef has a secret ingredient for the perfect burger.
In Jamie Oliver’s Cracking Burger recipe at jamieoliver.com, you add a handful of crushed Jacob’s Cream Crackers, fresh parsley and a generous dollop of Dijon mustard to take your patties to the next level.
